First, cut a zucchini lenghth-wise in thin strips & put in in the frying pan with a little oil and sage until just tender.
Meanwhile, get all the fixings to make a grilled cheese and add the cooked slices of zucchini and tomatoes to the sandwich. We also throw on some spinach. Then place it in a frying pan, on a griddle, or in the oven at 350 until cheese is melted and bread is toasted. You can experiment with different kinds of bread and cheese (asiago cheese is excellent-a bit costly though) or any condiments you choose to add. I wonder what pesto would taste like on this-we’ll have to try that next time.
