Ingredients

  • 1 1/2 to 2 pounds small potatoes
  • 1 Tbsp olive oil
  • 1/2 tsp dried rosemary (or 1 tsp fresh)
  • 1/4 tsp coarse sea salt
  • pinch of dried thyme
  • 4-5 cloves garlic, minced

Directions

  1. Scrub potatoes & put in slow cooker (If you’re using larger potatoes, cut them in smaller chunks first).
  2. Drizzle with olive oil, sprinkle with herbs and garlic. Toss the potatoes to coat them.
  3. Cover and cook on high for 3 to 3 1/2 hours.
